I've had a couple of recent conversations with Brian Behlendorf about how memory is (has been) used on the MDS with a ZFS-based MDT. This is an active area of development and some of the details are kind of tricky. I plan to compose some sort of summary for the ZFS section of the Lustre documentation. I'll add more to this bug as I begin to figure out what to say and exactly where in the docs it belongs.
